《大酒店》的电视合作栏目《洋厨房》将于2014年11月28日举办其第九届颁奖典礼,众人期待。而此次晚会的亮点是智利最大的食品生产商和出口商 - 爱阁食品(Agrosuper)的晚宴全程独家赞助。在晚宴期间,应邀出席的350位嘉宾将品尝到来自智利的最纯正的美食与美酒。作为此次盛典的官方荣誉支持方和大力推动者,智利驻上海总领事安明远接受了我们的媒体专访。
《大酒店》:作为2014年度《洋厨房》颁奖典礼,我们非常荣幸地获得了智利方供应商非常全面的赞助。作为智利驻沪总领事,您是否能谈一下有关这次合作的一些感想呢?
安明远先生:作为智利驻沪总领事,我非常高兴也倍感荣幸你们选择智利及智利食物作为本市举行的此次盛事的一部分。我想这是展现智中合作成果硕果累累的最佳例子,它表明我们双方的高度互补性,同时也认可智利食品业在中国所做的努力及其在中国市场提供的高质量产品。
您可能知道智利是一个食品出口国。我们拥有种植生产高质量、健康、安全食品的最佳地理条件。智利是一个岛国,北部是阿塔卡马沙漠,世界最干燥的地区;东部是高海拔山脉—洛斯安第斯山脉;南部是冰川、峡湾和巴塔哥尼亚;西部是太平洋。因此,智利免受害虫及灾害的影响,生产的食品质量全球顶尖。
另一方面,中国是智利在全球最重要的贸易伙伴,越来越多的中国消费者在寻找更高质量、更健康的支配。智利可提供并满足中国消费者的需求。
我们的其中一个主要目标在于推动智利食品(红酒、水果、肉类、海鲜等)进入中国市场,此次盛会完全符合我们这一目的,使我们能够接触最重要的一类客户:酒店的厨师和酒店总经理,以及其他重要的消费者。
在过去三年里,智利出口至中国的食品产品以50%速度在增长。在未来几年内,中国可能成为智利生产商首要出口地。例如,今年智利葡萄酒已经成为中国市场第二大的葡萄酒供应商。
此次活动也推动智利作为一个旅游目的地,为中国人民提供一个绝佳机会去参观复活节岛或南极及位于北方的阿塔卡马沙漠和古老的文化;中央山谷和酒区;圣地亚哥首都和瓦尔帕莱索;冬季练习滑雪,春季或夏季进行探险活动,去巴塔哥尼亚和Torres del Paine国家公园,钓鱼或划独木舟,赏鲸等,所有这一切都有我们的食物和酒伴随,同时游客们也感受到我们的热情并与当地民众见面。
《大酒店》:关于智利,您能否给我们做一些介绍呢,例如智利的文化等等?
安明远先生:智利位于南美洲南部西海岸,面向太平洋。从南至北,整个国家四千二百公里长,人口1700万。首都是圣地亚哥,由西班牙人于1542年成立,因此我们说西班牙语。我们的国庆日是9月18日。在这一天,我们纪念在智利第一个不是由西班牙国王任命的自治政府(1810)成立。
我们有一个开放的社会,人口种族单一,并且拥有很强的本土文化遗产和文化。在智利北部和南部的部分地区,在历史上我们曾接受过无数波移民,主要来自欧洲,但也有来自中东及亚洲的众多移民。
据说智利是诗人的故乡。在1945年,两位智利人曾被授予诺贝尔文学奖,一位是加夫列拉·米斯特拉尔于1945年获得,其为唯一一位获得此奖项的南美女性。另一位是巴勃罗·聂鲁达于1971年获得,其为世界著名诗人。聂鲁达的首部著作—《20首情诗和绝望的歌》的中文版已于近期完成翻译并出版。
智利世界上最清晰的天空,世界各国已在智利北部建设许多观测站。我们已与他们进行了广泛的合作。许多中国天文学家定期前往智利进行个人研究或参与国际项目。
复活节岛拉帕努伊位于距大陆约4000公里,是世界上最与世隔绝的地方,其也是智利领土的一部分。拉帕努伊人拥有深厚的文化底蕴,人们在岛上观光时将会看到宏伟的石面雕像—“摩艾石像”,并参观各礼仪场所。
《大酒店》:颁奖典礼当晚,智利美食也会是当晚的一大亮点,所以能否介绍一下智利的美食呢?而作为活动当晚最大的食品供应商,您觉得爱阁食品优势是什么?
安明远先生:正如我之前所说,智利在生产优质、安全、健康食品方面享有独特的区位优势。例如,我们的太平洋有丰富的鱼类和海鲜,像帝王蟹、鲍鱼、扇贝、三文鱼、智利鲈鱼、青口等。此外,智利种植出口苹果、桃子、樱桃、蓝莓、鳄梨、柠檬、猕猴桃、坚果、李子、梨、葡萄及肉类、猪肉、火鸡肉、鸡肉等。
在智利,我们一般每天食三至四次,即,简便早餐,午餐,承袭英国传统的下午茶及晚餐。面包是我们餐食的重要组成部分,尤其是我们称之为“hallullas"或“marraquetas”的食物。最著名且最受欢迎的菜肴包括“cazuela”—由牛肉或肌肉制作而成的汤,包括南瓜、土豆、玉米、绿豆和大米,porotos CON riendas(大豆面条),“pastel de choclo”— 蒸玉米沫并用洋葱调味,置于粘土进行烘烤;“chupe de mariscos” 各类海鲜砂锅带有面包、奶酪和调味品及肉馅或海鲜“馅饼”—美味的肉馅(或海鲜)馅饼,并加入洋葱、鸡蛋、葡萄干和橄榄。
三明治也是智利人日常生活中的核心部分。它可以很容易使其饱餐一顿,其中最著名的有:"chacarero"—牛肉配番茄、青豆和绿色辣椒;"lomito"—与肉片一起煮,加入蛋黄酱、鳄梨、番茄、如果你喜欢,还可以加酸菜;我最喜欢的"Barros Luco"—将牛排切片准备,置于炎热的铸铁,并加入熔化的奶酪。所有这些,加上“hallulla"或“marraqueta”面包将更加美味。

《大酒店》:您期待中的“智利风情”晚宴是怎样的呢?您最希望活动当晚能给嘉宾带来什么印象呢?
安明远先生:我希望每一个客人在品尝食物或品尝智利葡萄酒或皮斯科时能看到他们脸上洋溢的微笑。在智利,我们会在晚宴我们谈论许多话题,此时葡萄酒会起到很好的作用。与此同时,我们也很看重食物。
我想您一定会通过感官感知并认识智利;必须品尝美食和美酒;聆听语言、诗歌和来自智利的声音;看到沙漠、冰川、海洋、山脉和智利人民;触摸沙滩、树木、冰雪、流水;闻到水果、鲜花、绿草、早晨或雨天之后土壤散发的气味。

We are honored to have interviewed Mr. RODRIGO ARCOS CASTRO Consul General of Chile in Shanghai, the key promoter and honorable official sponsor of this grand event.
<Grand Hotels>: We feel so honored to be sponsored by Chilean suppliers for the reward ceremony of You Are the Chef in 2014. As Consul General of Chile in Shanghai, would you mind to talk about your feelings about this cooperation?
Mr. Rodrigo Arcos:As the Consul General of Chile in Shanghai, I am very glad and honored that you have chosen Chile and Chilean food and beverages to be part of this important event held in this city. I think this is the perfect example of a fruitful cooperation between Chile and China; it’s a demonstration of our high level of complementarity and recognition of the work that the Chilean food industry sector is doing to be in China with high quality products.
You may probably know that Chile is a food exporter country; we have the best geographical conditions for producing high quality, healthy and safe food. We are an island; we have the Atacama dessert in the North, the driest in the world; a high mountain range to the East, the Cordillera de los Andes; glaciers, fiords and Patagonia in the South; and the Pacific Ocean on the West. We are free of pests and diseases, and our food is top quality in the world.
On the other side, China is our most important trade partner in the world and the Chinese consumers are looking, more and more, for higher quality and healthy food. Chile can provide and match your requirements.
One of our main goals is to promote Chilean food products (wine, fruits, meat, pisco, seafood, etc.) into the Chinese market and this event fits perfectly for that purpose. It will allow us to reach one of the most important clients: Hotel Chefs and Hotel General Managers, as well as other important consumers.
Chilean food products exported to China have been growing at a 50% rate the last three years, and this country could become the first destination for Chilean producers in the coming years. For example, Chilean wine has become, this year, the second largest in the Chinese market.
This event will also be an opportunity to promote Chile, as a tourist destination, a good chance for the Chinese people to visit Easter Island or Antarctica, but also Atacama dessert and the ancient cultures in the North; the central valley and the wine district; Santiago our Capital city and Valparaíso; to practice ski in winter, adventure sports in spring or summer, to go to Patagonia and Torres del Paine, Fly fishing or kayaking, whale watching, etc., all of this accompanied by our food and wine, and also to feel our hospitality and meet the people.
<Grand Hotels>: Could you give us some introduction about Chile, for instance, the Chilean culture?
Mr. Rodrigo Arcos:Chile is located in South America, in the southern west coast facing the Pacific Ocean. From north to south the country is 4,200 km long and a population of 17 million inhabitants. Capital city is Santiago, founded by the Spaniards in the year 1542 and we speak Spanish. Our National Day is September 18th. On that date we commemorated the establishment of the first autonomous government in Chile (1810) not being appointed by the King of Spain.
We have an open society and a very homogeneous population, with strong indigenous heritage and cultural presence in some regions in the north and south of the country; also, through our history, we have received many waves of immigration, mainly from Europe, but also from the Middle East and Asia.
It is said that Chile is a poet’s land, and two Chileans have been awarded with the Nobel Prize of Literature, Gabriela Mistral in 1945, the only south American woman that have received this award, and Pablo Neruda, one of the most well known poets in the world, in 1971. Again, one of Neruda´s first books, Twenty Poems of Love and a Song of Despair, has been recently translated and published in a Chinese edition.
Chile has the clearest skies in the world, many observatories from all over the world have been built in the north of Chile and we cooperate and work extensively with all of them. Many Chinese astronomers visit Chile regularly to conduct their research or to participate in international projects.
Easter Island, Rapa Nui, is located almost 4,000 km. from the continent, is the most isolated place in the world and part of the Chilean territory. The Rapa Nui people have a rich cultural heritage and people can go around the island to see the magnificent stone face statues, the “Moais”, and visit all the ceremonial sites.
<Grand Hotels>: Chilean food will be a big highlight on the night of the ceremony. Could you introduce some Chilean food to us? As the biggest food supplier of this activity, what do you think is the advantage of Agrosuper?
Mr. Rodrigo Arcos:As I said before, Chile has distinctive geographical advantages for producing high quality, safe and healthy food. Our Pacific Ocean, for example, is rich in fish and seafood; we have king crabs, abalones, scallops, salmon, Chilean sea bass, mussels, and many others. Also, Chile produce and export apples, peaches, cherries, blueberries, avocados, lemons, kiwis, nuts, plums, pears and grapes, as well as meat, pork, turkey, chicken, among others.
In Chile, we usually have three or four meals a day, a light breakfast, lunch, high tea -that comes from the English tradition-, and dinner. Bread is an important part of our diet, especially what we call “hallullas" or “marraquetas”. Most famous and popular dishes include “cazuela” -soup made with beef or chicken, which includes squash, potato, corn, green beans and rice, porotos con riendas (beans with noodles), “pastel de choclo” -mashed, steamed corn seasoned with onion and baked in clay dishes-, “chupe de mariscos” -assorted seafood casserole with bread, cheese and condiments’; and meat or seafood “Empanadas” -savory pies filled with meat (or seafood), onion, egg, raisins and olives.
Sandwiches are also a central part in Chileans everyday life. It could easily replace a full meal, between the most famous are: the "chacarero" -beef with tomato, green beans and green chilis-, "lomito" -cooked and sliced pork with mayonnaise, avocado, tomato and, if you like, sauerkraut-, and my personal favorite, "Barros Luco" -sliced steak prepare in a hot cast iron and melted cheese-. All of them taste much better in an “hallulla" or a “marraqueta” bread.
Agrosuper is the biggest meat and fresh food company in Chile and one of its main advantages has been the vertical integration of all their productive process. That means the company controls, knows and supervises every step of the production line, which allows them and the consumers to have full traceability of their products, increasing its quality and safety.
Agrosuper is the main producer of pork and chicken in Chile and also the main exporter of them as well as turkey. They also produce and export salmon. You may have the opportunity to taste every one of them during the dinner.
Being the main food supplier of this event will allow Agrosuper, and the food producers in Chile, to be recognized and appreciated for the high standard, safety and quality of their products and strong and growing presence in this market.
<Grand Hotels>: How would a “Chilean-style” dinner party be like according to your expectation? How do you want to impress the guests at the activity most of all?
Mr. Rodrigo Arcos:I would like to see a smile in every guests face when they eat the food or drink Chilean wine or pisco sour. In Chile we talk a lot during our dinner parties, and wine goes very well with this, but we also give great importance to the food.
I think that you must feel and know Chile through your senses, you must taste the food and wine; listen to the words, poems and the Chilean voices; see the dessert, the ice, the sea, the mountains and the people; touch the sands, the trees, the snow, the water; smell the fruit, the flowers, the smell of the grass and the soil in the morning, after a rainy day.
If we can provide your guests with some of these feelings, if we are able to give them a taste of Chile, they will be impressed to see how many things we have. This will allow them to acknowledge something that is really important, they will know where these products are coming from, how is the climate like, the people that produce and farm them, where Chile is located, and they will be more enthusiastic to buy our products and use them in their kitchens, restaurants and hotels in China.
